RECIPE: CHIA SEED PUDDING

I was never a person who could intermittent fast. Like, maybe… but skipping breakfast was really the challenge for me. I eat an early dinner, so it is easy to close the fridge door at 5pm and call it a day - but when I wake up, part of what gets me to jump out of bed is my coffee and my meal.

But also, and I know you can feel me on this, mornings start when my eyes open and they. are. busy.

I love it tbh. I am my best self during a busy morning BUT that means that for me to squeeze in meditation, journaling, a workout, taking out the dog, feeding the dog. and all that I need to get ready before 9am… and not wake up at an ungodly hour like 4am… I need to meal prep and have the start of my day waiting like a press of a button (I imagine this is double or triple hard with kiddos).

So, pass on the toast or grabbing a sugar-packed granola bar on your way out and instead - soak some chia seeds overnight and make a DELICIOUS chia seed pudding to start the day with.

I pulled the chia seed pudding overnight recipe from “Oh She Glows Everyday” cookbook - which is an awesome book btw.

Recipe:

1-can of light coconut milk

1/4 cup of chia seeds

2 tablespoons of pure maple syrup (I use THIS sugar free option)

1/2 teaspoon of vanilla bean powder

Dash of fine sea salt

What I use to layer the parfait:

  • Blueberries - packed with flavonoids and anti-inflammatory properties, and low glycemic, these babies are always in my fridge

  • Chopped up raw organic walnuts

  • Toasted coconut flakes

  • Drizzle pure maple syrup (Again, I use sugar free option)

  • Cinnamon sprinkle

Boom. Delicious!

And last, but not least…

Coconut flakes are chockfull of flavor and nutrition. A healthy source of fat, fiber, iron, and protein, they can be enjoyed practically guilt free when consumed in moderation.
